I don’t know what made me think of making stuffed peppers tonight…I’ve made them from recipes and they never came out right…but tonight…GREAT SUCCESS!! I included the recipe below. Today I just added what I thought would be yummy
Ingredients:
Ground Beef or Turkey
Mixed Red, Yellow, and Green Bell Peppers
white rice
1/4 Bag of mixed vegetables
1 can diced tomatoes
red or white onions
Havarti cheese slices

What I did…
Clean the peppers and chop off the tops. Seed them and let them dry. Chop the onions (as much as you like) into tiny squares and cook with the ground beef or turkey. Season as you like. I use lots of garlic in my foods…I don’t use much salt and pepper for seasoning, I use Adobo a lot…anyway, season it the way you like. Cook all the way through till done. Drain any excess oil. Cook your rice and set aside.
Arrange your peppers into a pan that fits, I used a glass baking pan. Fill the bottom layer of the peppers with a spoon or two each of diced tomatoes. Mix the meat mixture with as much of the mixed vegetables as you would like. I used half the bag. Spoon rice into the center of the peppers and pack tightly. Add the meat/vegetable mixture into the rest of the pepper. Pour tomatoes into the peppers to fill it with some of the juices, then cover entire dish with foil on top, cooking for about 15 minutes on 450 degrees.
Once the peppers have slightly cooked, add in the remainder of your rice into the bottom of the bowl, with the remaining meat/veggie mixture. Add the remainder of your tomatoes as garnish over the tops, and throughout the pan to create a bit of “juice” at the bottom of the pan. Add a slice of Havarti cheese over each pepper, then sear on high for 1-3 minutes just long enough to make the cheeses bubble, and VOILA!!
